HIDEYOSHI  by SUZUKI SHUZOTEN (秀よし - 鈴木酒造店)

Region: Daisen City, Akita Prefecture, Tohoku, Japan

Est.: c. 1689 (Over 330 years of history)

 
Key Feature: Utilizing the "Water of Longevity" (Choju-sui) and premium rice varieties grown in Akita, the brewery is known for its elegant, clean, and often dry "Akita-style" sake.

 

 

Brand Philosophy: Suzuki Shuzoten brews sake worthy of the name "Hideyoshi," meaning "excellent and good." They combine ancient techniques with modern technology to consistently produce sake that is both smooth and flavorful, maintaining a classic Akita elegance.

Akita is celebrated as a "Kingdom of Transcendent Sake" due to its ideal climate and pristine resources. The region is famous for its soft, low-mineral water, which produces a sake known for being mellow, delicate, and silky-smooth on the palate. The long, cold, snowy winters allow brewers to practice Akita-style low-temperature, long-term fermentation, which results in a clean, elegant, and refined flavor profile, often slightly dry with subtle umami and pleasant aromas.

Our special guest from Niigata prefecture - specialits sake promoter and distributor Kazu Yoshizaki san will share with us some unique and not avaialbe (yet) in UK sake bottles .
