Their flagship brand, "Plumity," utilizes only 5–8% of the total harvest—carefuly selected ume fruits—to craft umeshu that maximizes the fruit's aroma and richness.   As a smal-scale farm, they meticulously handle al processes by hand, from soil preparation and planting to harvesting, soaking,
