Mansaku no Hana Junmai Daiginjo (from Hinomaru Jozo in Akita Prefecture) is a masterclass in "sessionable luxury." While many Junmai Daiginjos are built to be "competition" sakes (high aroma, short finish), the Mansaku no Hana style is designed to be "Food Sake"—sturdy, umami-laden, and remarkably balanced.
Rice Variety: 100% Yamada Nishiki.

Yeast Strain: In-house Yeast. Hinomaru Jozo uses proprietary strains to maintain their signature "gentle and clean" profile.
Alcohol Content: 16%.
SMV (Sake Meter Value): ±0 to +1 (Perfectly balanced between sweet and dry).
Acidity: 1.4. This is the secret to its food-pairing success; it has just enough length and quick finish to refresh the palate without being tart.
The Nose: Very "modern" and bright. Dominant notes of green apple, pear, and fresh marshmallows.
Unlike "louder" Niigata sakes, the aroma here is described as "transparent" and "crystal clear."
The Palate: Silky and rounded. It features a great amount of of flavor—a Japanese term (fukurami) describing how the sake expands on the mid-palate with a creamy sweetness before tapering off.
The Finish: A subtle lactic/yogurt tang that is characteristic of Akita brewing (the "snowy" prefecture style).
