Aroma Unlike typical earthy Junmai sakes, Nito is quite aromatic and fresh.
Fruity notes of fresh melon, green apple, and a hint of citrus (like lemon zest or grapefruit).
Herbal/green cool notes, similar to fresh mint or spearmint.
Savory and pleasant backdrop of toasted malt or steamed rice.
Palate sweet and savory
Flavor: It starts with a gentle, juicy sweetness (the fruit notes from the nose translate here) but is quickly balanced by a refreshing acidity.
Balance: The "Two Hares" concept shines here. It feels satisfyingly rich (umami from the Yamadanishiki rice) yet surprisingly light and clean. It avoids being heavy or cloying.
Finish crisp & clean: Despite the initial richness, it has a sharp, dry finish that washes the palate, making you ready for the next sip (and the next bite of food).
Serving Recommendations
Temperature: Best served chilled (around 10-12°C / 50-55°F).
This keeps the fruit aromas fresh and the acidity crisp.
Vessel: A white wine glass is excellent for capturing the minty/fruity aromatics, though a traditional porcelain cup works well if you want to emphasize the savory rice notes.
Food Pairings
Nito 65 is an incredibly versatile food sake because it balances acidity (which cuts through grease) with savory depth.
Izakaya Classics: Yakitori (grilled chicken skewers), Gyoza, or Tempura.
Rich Seafood: Grilled Mackerel (Saba) or Yellowtail (Hamachi).
Western Pairings: The acidity allows it to pair unexpectedly well with Cheese (like Comté or fresh Mozzarella) or herb-roasted chicken.
Store in cool, dark place. Refrigerate once open.
