Brewery Story
Founded in 1911 in Minabe, Wakayama, Baijuen has spent more than a century cultivating Kishu Nanko plums in one of Japan's most celebrated plum-growing regions.
Alongside producing premium umeboshi and other plum products, the company has continually expanded its expertise, applying generations of knowledge to the production of high-quality umeshu. While honouring its heritage, Baijuen continues to discover new ways to showcase the exceptional qualities of the Kishu Nanko plum.
Brewing Philosophy and Production
Baijuen believes exceptional umeshu begins with exceptional fruit.
Only carefully selected, fully ripened Kishu Nanko plums are used, with each harvest individually assessed before being gently prepared for infusion. Decades of experience in plum cultivation allow the team to maximise the fruit's natural aroma, sweetness and freshness while preserving its distinctive character.
