Brewery Story
Founded in 1880 in the UNESCO World Heritage village of Gokayama, Toyama Prefecture, Sanshoraku Shuzo has been producing sake for more than 140 years in one of Japan's most dramatic mountain landscapes.
Surrounded by deep snow each winter, the brewery has developed alongside the traditions and daily life of the local community. The severe climate, pristine natural environment and generations of local brewing knowledge continue to shape every bottle produced today.
Remaining deeply connected to its surroundings, Sanshoraku creates sake that reflects both the resilience and warmth of life in Gokayama.
Brewing Philosophy and Production
The name Sanshoraku expresses the brewery's wish that people should drink sake with smiles and enjoyment.
Rather than simply producing excellent sake, the brewery aims to create bottles that bring people together around the table. Traditional Yamahai brewing remains central to this philosophy, allowing naturally occurring microorganisms to develop complexity, structure and profound umami over extended fermentation.
The role of the brewer is seen not as controlling nature, but as carefully nurturing the yeast and koji while observing each stage of fermentation with patience and respect.
Style and Signature Expressions
Sanshoraku sake is known for its depth, richness and distinctive mountain character.
Rather than focusing solely on fragrant aromatics, the brewery prioritises umami, complexity and food compatibility.
