Honjozo
Honjozo is a traditional style of sake made with rice, rice koji, water and a small amount of brewer’s alcohol. The rice is polished to 70% or less of its original size.
The addition of brewer’s alcohol helps bring out the sake’s aromas and can create a lighter, cleaner and smoother finish. Compared with Junmai sake, Honjozo is often lighter and more delicate, while still retaining the savoury flavours and umami of the rice.
