Brewery Story

Established in 1899 in Nishikan Ward, Niigata City, Sasaiwai Shuzo has been producing sake for well over a century. Originally founded as Sasaguchi Brewery, it developed along the historic Hokkoku Highway, where people, trade and culture have flowed through the region for generations.

The brewery's original earthen-walled wooden buildings, still in use today, have stood for more than 100 years and remain a living reminder of Niigata's rich brewing heritage. As each generation has built upon the work of the last, Sasaiwai has remained firmly rooted in its local community while continuing to evolve with changing tastes.

Today, the brewery proudly carries forward both the traditions of Niigata sake and the history embedded within its remarkable brewery buildings.

Brewing Philosophy and Production

Sasaiwai Shuzo believes that sake should always remain a true local sake, crafted to accompany everyday life.

Rather than chasing trends, the brewery focuses on understanding the relationship between rice, water and fermentation, allowing experienced brewers to guide each batch according to its individual character.

Using primarily Niigata-grown sake rice, Sasaiwai carefully manages every stage of brewing, from koji production through to fermentation, while also preserving traditional Kimoto brewing methods. By combining historic craftsmanship with fresh ideas, the brewery continues to produce sake that reflects both its heritage and its region.

Style and Signature Expressions

Sasaiwai sake captures the clean elegance for which Niigata is famous while offering greater depth and richness than might be expected.

Bright, refreshing finishes are balanced by gentle rice sweetness and savoury umami, making the range exceptionally versatile with food. Alongside its classic expressions, the brewery also produces limited releases that showcase a more experimental side, blending traditional techniques with contemporary creativity.
