Brewery Story
Founded in 1846, Shinzato Shuzo is recognised as the oldest existing awamori distillery in Okinawa. For more than 170 years, the brewery has preserved the traditions of Ryukyuan spirit making while continually adapting to new generations of drinkers.
Throughout its history, Shinzato has remained dedicated to protecting the heritage of authentic awamori, maintaining techniques that have been passed down through seven generations. While its facilities have evolved over time, its commitment to producing spirits that express the culture, climate and character of Okinawa has remained unchanged.
Today, the seventh-generation family continues to build on this legacy, combining traditional craftsmanship with modern innovation to ensure the future of Okinawan awamori.
Brewing Philosophy and Production
Shinzato Shuzo believes that preserving the culture of awamori is just as important as producing exceptional spirits.
Production follows the traditional Okinawan method, using rice inoculated with black koji mould before undergoing a single fermentation and single distillation. The distinctive black koji creates the rich aromas, depth and complexity that define authentic awamori, while careful maturation allows the spirit to develop increasing smoothness and character over time.
Although deeply respectful of tradition, the brewery continues to explore new ideas and techniques, ensuring that awamori remains relevant for modern drinkers without losing its cultural identity.
