Description

This Daiginjo is named in honor of the successive heads of our brewery, bearing the name "Matsuemon." now in its 19th generation. It is meticulously crafted using Yamada Nishiki rice, polished to 40% at our in-house facility, and carefully hand-washed to ensure the highest quality of ingredients. The result is an exceptional sake with a clear, smooth mouthfeel and well-balanced umami that refreshes the palate. As the sake warms slightly in the glass, you will be pleasantly surprised by the increasing depth and complexity, revealing its full potential.
Awarded the Gold Medal at the Annual Japan Sake Awards 2024 and the Gold Medal at The Fine Sake Award, Japan 2023.

Tasting note
A gentle sweetness spreads across the palate,
accompanied by beautiful fruity and floral Ginjo aromas. The clean finish leaves a refined, lingering aftertaste. As the sake interacts with the air and its temperature changes, both the flavor and aroma deepen, revealing even more complexity.

Food paring
Serve lightly chilled (recommended at 10-17°C). It pairs wonderfully with a fruit salad of pears and apples, fatty tuna (toro), and grilled cod or pork marinated in sake lees and miso.
